Valerie Bertinelli’s Orange, Black Pepper, & Walnut Biscotti are an absolute delight; with a bright orange notes, a light peppery finish, and some walnut crunch!

Back when cable was still a thing and Netflix was non-existent, the Food Network was one of the most watched channels in this household. It didn’t matter if it was Rachel Ray or Rachel Allen, Ina Garten or Anna Olson, when the TV turns on, you can bet the Food Network will get some minutes. I myself enjoy watching these chefs share their recipes on TV, but as I got older and got more busy, I watched TV less and less. I do find myself listening in though. Whenever one of my brothers was watching TV close by, I’d often be subconsciously listening in.

When my brother was watching Food Network one time, I overheard a voice that I didn’t quite associate with it. But coming off a weekend binge-watch of Hot in Cleveland episodes with the same brother, I knew that voice belonged to Valerie Bertinelli. Out of curiosity, I dropped what I was doing and went over to watch the show with him, and I found myself delightfully surprised.

In that very first episode I saw her on, she was making these Orange, Black Pepper, & Walnut Biscotti. I’m not really familiar with Valerie Bertinelli’s background, but her biscotti definitely got my interest piqued. As I watched more of Valerie’s Home Cooking and saw more of her recipe repertoire, I still couldn’t get her biscotti out of my head. I ended up writing the recipe down in a yellow pad, thinking I’d make it “soon”.

These Coffee Chocolate Crinkles are one of the best I’ve eaten. The coffee and deep dark chocolate flavor combo creates a complex eating experience, with pockets of salty surprise scattered inside the cookies.

To say that I gained a new appreciation for chocolate crinkles after eating these would be an understatement. I’ve never paid much attention to crinkles because I feel like they’re one of the most easily accessible cookies around. I even used to have a classmate who sold crinkles for some extra pocket money, so I guess you could say that growing up, crinkles were always pretty much a norm of my youth. They were something yummy and familiar, but not really something that excited me, if you know what I mean.

It has been years since I last had a crinkle actually, but when I came across this recipe for Coffee Chocolate Crinkles, it was really the combination of the words coffee and chocolate that captured my attention. I don’t think I’ve ever eaten anything I didn’t enjoy as far as this flavor combo is involved, plus I’ve gone long enough without eating crinkles. I actually found myself missing it.

We all know how the story goes from there for people like me who love putzing around in the kitchen. When we get a craving, there’s an 80% chance we’ll end up making whatever it is.

These Coffee Coconut Chocolate Chip Cookies are an upgrade on your regular choco chipper. Who knew the addition of shredded coconut and coffee could have such an effect?!

Being on lockdown can be psychologically difficult for some, but from my point of view, this is the best opportunity to do some of the things you’ve always wanted to do but always found yourself too busy to start. There’s that book you’ve been meaning to get to, or that new watercolor set you’ve been meaning to start experimenting with. How about the 1000 piece puzzle gathering dust in your closet? Or have you tried that recipe you bookmarked ages ago? (Although in my house I’ve been trying to refrain from baking because my mother asked me not to use too many eggs lol.)

The thing that seems to be the favorite lockdown activity however has been cleaning. And in cleaning, many people have been unearthing old things that transport them to another time and place. Just the other day, my kindergarten teacher sent me a photo of little me with my class from the year 1996. No doubt she had found it during her own cleaning escapade.

These Coffee Chocolate Chip Cookies pack a whopping coffee punch and is not for the faint of heart! If you like your coffee strong, you’ll like these.

Here’s a painful realization: As you grow older, it gets harder and harder to find time to do what you want without shirking your responsibilities. You scrabble for time and energy to fit everything inside a 24 hour timeframe while still getting some time for that damned human requirement called sleep. Back in the day I’d pull all nighters because I needed to for school, but nowadays when I continuously sleep late I get bouts of bad allergies. It’s a frustrating and also an exhausting thing.

But the thing is, unless I’m totally exhausted for the day, there will be nights where I lay in bed in the wee hours of the morning unable to shut my brain off. Feelings of anxiety over unfinished things, mixed with new ideas to add into my never-ending to-do or to-try lists, keep me awake. The next day, I’d look like a freaking panda. I suppose here is where the value of coffee shoots up for me. Not only has coffee become something I love to drink, it’s become a necessity.

If they sold coffee in an IV drip, I’d probably have some.
