Ever since I started making my own banana breads, I have been widely dissatisfied with about 95% of banana breads bought from the outside. It’s not that I’m saying I’m a better baker or anything. I’m just saying, the Internet is rich with banana bread recipes that are real gems. Aside from chocolate chip cookies, I think a good banana bread is one of the most important things a home baker should have in their arsenal of recipes.

Personally, I already have a handful of banana bread recipes that I enjoy going back to. But every once in a while, a new and interesting recipe pops up and entices me. And then I can’t help myself but write about yet another banana bread recipe on the blog. I mean, how can you not be curious about something called Miso Banana Bread?

Miso. That salty, savory paste the Japanese add into their soup and ramen. THAT miso. In a banana bread. Say what?

Whenever I make banana bread, it kind of shocks me that I managed to go so long without eating or making it. I always end up feeling like I don’t make it often enough. Truth be told, banana bread isn’t my favorite baked good of all time, but it’s the one that gives me the greatest comfort. It’s one of the few things in my life that has stayed constant in the sense that I liked it as a kid, and I still like it as an adult. Only difference is, now that I’m making it, I go ahead and add things in to make something like this Chocolate Chip Banana Bread.

Don’t get me wrong, I’m grateful for change. I believe that people and attitudes need to evolve with the times. I also believe that change allows you to leave bad memories behind. Still, it’s nice to have a handful of things that stay the same through the years. It’s nice to have some things that don’t make me cringe whenever I examine my memories lol.

Cornbread is one of those underrated things. Apart from the occasional corn muffin from Kenny Roger’s, I don’t think a lot of people on this side of the world actually eat cornbread much. I remember very vaguely having some from a Southern restaurant some time ago, with some maple syrup and their version of Buttermilk Chicken. It’s not a popular thing though.

Luckily, I’m not the type of person whose actions are dictated by what is trendy or in. I’m more motivated by my love and enthusiasm for something, regardless of how corny it might be. (Get it? Corny? Okay, nevermind.) That might be a good thing or a bad thing depending on whom you ask, but in the case of cornbread, I think it’s a good thing. If I wasn’t such a fan, I wouldn’t have discovered this Cheese-Stuffed Cornbread.

It might just be the king of all savory cornbreads.

So I guess I’m breaking my self-made tradition of posting pastries made with liquor on the first week of a new year, just because somebody drank all the booze I was supposed to bake with and I just wasn’t in the mood to go out and buy more. So instead I thought I’d write about something I haven’t in a while: Banana Bread. In particular, a Double Chocolate Banana Bread.

Because that’s how you’re supposed to start your year– with a bang!

If a Banana Bread could reinvent itself to be more swanky, this would be one of those ways. Apart from a good amount of chocolate spread (or Nutella if you like) swirled into a delicious banana base, you’ve got bits of cacao nibs inside that give this bread a nice earthy crunch.

Cacao nibs, in case you haven’t heard about them before, are basically cacao beans that have been roasted and broken into small pieces after having their husks removed. They’re basically a pure unsweetened version of chocolate chips with a deep nutty taste. And just like with chocolate chips, you can snack on cacao nibs right from the bag.

Although I reckon those who like milk chocolates will find these lacking for their tastebuds. Dark chocolate lovers like myself may appreciate them more au naturel, but everybody will love cacao nibs in the form of a Double Chocolate Banana Bread. I promise you!
