Despite the slow start I’m having in terms of regularizing my posting schedule for the blog, I’m adamant about writing about these Peanut Butter & Kahlua Brownies. These brownies are almost hypnotic, with those psychedelic patterns of peanut butter on top. But really, what’s hypnotic about them is the taste. 

I almost halved this recipe when I made it, because it fills a huge 9 by 13-inch pan and that’s a lot of Peanut Butter & Kahlua Brownies for a household of six. But because I was trying very hard to finish this bottle of Kahlua we have at home, I shrugged and went ahead with the whole yard of it. To say that I’m glad I did would be an understatement.

There seems to be a recurring theme among my Christmas recipes this year, although it wasn’t intentional on my part. I didn’t realize I had made two reinterpretations of hot chocolate! I managed to make only two recipe though, which kind of makes me sad in a way. So I’m just glad I made them count, because both recipes involve chili and chocolate. Two of my favorite things in the world! This Spiced Tablea Chocolate Cake is my special post for Christmas so I had to make it extra. We’re talking marshmallow frosting and a full coat of shining, shimmering chocolate ganache.

For the chocolate base, I used tablea. These are chocolate tablets made from roasted cocoa beans mixed with muscovado sugar and then shaped into tablets. I am really proud of the growing chocolate industry here in the Philippines so I am always so excited to incorporate Filipino ingredients into the recipes I make here. This is my very first time using tablea in any dessert I have made, and I must say I am really happy with the result. I think you will be too!

So I guess I’m breaking my self-made tradition of posting pastries made with liquor on the first week of a new year, just because somebody drank all the booze I was supposed to bake with and I just wasn’t in the mood to go out and buy more. So instead I thought I’d write about something I haven’t in a while: Banana Bread. In particular, a Double Chocolate Banana Bread.

Because that’s how you’re supposed to start your year– with a bang!

If a Banana Bread could reinvent itself to be more swanky, this would be one of those ways. Apart from a good amount of chocolate spread (or Nutella if you like) swirled into a delicious banana base, you’ve got bits of cacao nibs inside that give this bread a nice earthy crunch.
