Visiting a country during its different seasons can be interesting. For one thing, you get to appreciate the artistry that Mother Nature has poured upon each season to make them unique from one another. The changing of the seasons has a way of reminding me as well how there’s a continuing cycle in the Universe. That all we have to do is to keep moving and the world will keep moving alongside us.

I was lucky enough to visit Korea twice last year– once at the beginning and another at the end of this seasonal cycle. My family and I had a short vacation in Seoul as spring started to make its presence known in the city. It was a stark contrast to my winter trip with new friends from Global Wow Korea.

There are plenty of things I didn’t get to try during my very brief visit to Sapporo a few weeks ago, and one of them is Hokkaido breads and pastries. It’s a known fact that Hokkaido produces the best dairy products in all of Japan, so can we all just take a second to imagine how amazing the pastries and desserts scene in Hokkaido probably is? Most pastries rely heavily on milk usage after all!

As is my tendency when I miss out on something during my travels, I go in search of a recipe I can make at home that will allow me to sample some sort of specialty dish. At the moment, I have no way of comparing whether this bread is close to the real Hokkaido breads, but I was really happy with the result of this recipe regardless.

When I set out to make this Hokkaido Milk Bread recipe, I already knew I was going to be impressed by this. ‘Pillowy soft! Pillowy soft!’ Those are the words that are always uttered by anyone who has ever made this particular kind of bread at home. Differing recipes aside, those two words are always associated with the Japanese Milk Bread. Now, I’ve made enough Asian tangzhong breads to know that this recipe isn’t going to fail me, but I didn’t realize just what “pillowy soft” really meant until I cut into this.

Until I saw that crumb.

It boggles my mind to this day how I could be the only person in our household who likes corn. I’m talking about real, actual like– the sort where you’ll willingly go out of your way to buy and eat corn because you want to, not because you don’t have any other choice.

I must be the only one among us who particularly enjoys corn desserts like mais con hielo or maja blanca (the more corn the better), or who orders sweet corn flavoured with barbecue powder off the streets. I’m the only one who buys fresh corn on the cob from the lady who often comes around to sell them door-to-door.

So every time I make cornbread or corn muffins, it frustrates me how ambivalent my family is about them. Cornbread is so awesome! Even the corn muffins sold in Kenny Rogers puts a smile on my face (except when they hold back on the corn bits inside). While my family will eat anything I feed them, I just feel sad about the lack of enthusiasm. They don’t get the thrill of the corn (lol).

So I guess I’m breaking my self-made tradition of posting pastries made with liquor on the first week of a new year, just because somebody drank all the booze I was supposed to bake with and I just wasn’t in the mood to go out and buy more. So instead I thought I’d write about something I haven’t in a while: Banana Bread. In particular, a Double Chocolate Banana Bread.

Because that’s how you’re supposed to start your year– with a bang!

If a Banana Bread could reinvent itself to be more swanky, this would be one of those ways. Apart from a good amount of chocolate spread (or Nutella if you like) swirled into a delicious banana base, you’ve got bits of cacao nibs inside that give this bread a nice earthy crunch.
