This recipe makes gorgeously soft Chocolate Matcha Cupcakes, with deep chocolate notes and a matcha undertone highlighted by a tasty matcha cream cheese frosting. One of my favorite cupcakes to date!

Cupcakes aren’t my favorite bakes so I don’t make them often, but when I do, I pick flavors I feel I will really like. Gotta make all that cake and frosting count, you know? I like to put together a combination of flavors that will give me a good balance of interesting flavors. Something not too sweet, but memorable. And these Chocolate Matcha Cupcakes, while fairly simple, are that.

Personal bias aside, it’s easy to gravitate towards a chocolate cupcake. They are one of those no-fail things in the baking world. But I wanted to mix things up a little. Also, I wanted an excuse to make my favorite Matcha Cream Cheese frosting again. It’s a recipe I shared before, when I made Matcha from head-to-toe Cupcakes; and it’s so damn good I knew that 50% of these cupcakes were already taken care of thanks to that frosting.

And when you watch my video below, you will see it takes absolutely no time to put them together. That’s the beauty of cupcakes: They are the quickest and easiest way to satisfy your cake cravings. And frankly, homemade ones almost always come out better than store-bought ones.

Matcha Green Tea White Chocolate Blondies to knock your socks off!

Matcha White Chocolate Bars COVERR - Matcha Green Tea White Chocolate Blondies to knock your socks off!

My desire to make Green Tea White Chocolate Blondies first started after an afternoon snack at Nomi Matcha Cafe. We had ordered a dessert platter and I was honestly expecting the bars to be my least favorite part of it, but it was the complete opposite. Even I was surprised, but pleasantly so! I’m not normally a fan of blondies or white chocolate because I often find them too sweet for my taste. But somehow Nomi’s bars worked their charm on me. They gave me such a strong impression I felt compelled to make some at home. After a bit of research, I finally came across a recipe that I really really liked.

There were really three major considerations for me when it came to making the perfect Green Tea White Chocolate Blondies. First, they couldn’t be too sweet. That’s always the danger with any dessert, but especially so when involving white chocolate. Second, they had to have an obvious matcha flavor. Last, they had to have a fudgy, chewy texture that would make them a pleasure to munch on. And this recipe hits all three on the head.

This simple Matcha Cupcakes Recipe is the only one you’ll ever need

After making these Matcha Cupcakes for the first time, there had been only one thought left in my mind: It’s unfortunate that the original recipe only makes 9 cupcakes. With something as good as these, there’s no way that 9 cupcakes would be enough. There’s no way that a household of 6 could be forced to share just 9 of these scrumptious Matcha Cupcakes among them, because then some wouldn’t be able to have two cupcakes. I think you would want to eat at least two, once you get a taste of these.

These are possibly the best version of homemade Matcha Cupcakes I have ever eaten. I am really not exaggerating.

Missing Japan, making Matcha Melon Pan

Matcha Melon Pan COVER - Missing Japan, making Matcha Melon Pan

Whenever the topic of melon pan is brought up, someone inevitably asks me what part of this bread makes it melon. The reactions are often funny when I answer that it’s only the design on top that makes it reminiscent of a cantaloupe; although I’m pretty sure somewhere in Japan they’re already making melon-flavored melon pan. One of my favorite variations is for sure this Matcha Melon Pan.

Melon pan, in case you’re new to it, is an enriched sweet dough topped with a cookie dough layer that bakes up into a crisp shell. It’s like a fluffier and less flaky sibling of Hong Kong’s Pineapple Bun, which coincidentally also contains no pineapple whatsoever. (Who names these things? Lol.)

In Japan, many bakeries churn out melon pan all day long. Whenever I’m walking down the street and get a whiff of a freshly baked batch being taken out of the oven, it’s nearly impossible to resist grabbing one to go. The original flavor is the most common, but sometimes you see chocolate chip dotted ones as well.
