This recipe makes gorgeously soft Chocolate Matcha Cupcakes, with deep chocolate notes and a matcha undertone highlighted by a tasty matcha cream cheese frosting. One of my favorite cupcakes to date!

Cupcakes aren’t my favorite bakes so I don’t make them often, but when I do, I pick flavors I feel I will really like. Gotta make all that cake and frosting count, you know? I like to put together a combination of flavors that will give me a good balance of interesting flavors. Something not too sweet, but memorable. And these Chocolate Matcha Cupcakes, while fairly simple, are that. 

Personal bias aside, it’s easy to gravitate towards a chocolate cupcake. They are one of those no-fail things in the baking world. But I wanted to mix things up a little. Also, I wanted an excuse to make my favorite Matcha Cream Cheese frosting again. It’s a recipe I shared before, when I made Matcha from head-to-toe Cupcakes; and it’s so damn good I knew that 50% of these cupcakes were already taken care of thanks to that frosting.

Luckily, the other 50% of these cupcakes, the cake base involving chocolate and matcha, also exceeded my expectations, making these Chocolate Matcha Cupcakes a perfect little package. And when you watch my video below, you will see it takes absolutely no time to put them together. That’s the beauty of cupcakes: They are the quickest and easiest way to satisfy your cake cravings. And frankly, homemade ones almost always come out better than store-bought ones.

A breakfast and afternoon snack staple in Hong Kong, these Hong Kong Style Pineapple Buns are delicious on their own but pair perfectly with some good old Hong Kong Style Milk Tea!

When I was younger and all those budget flights were not in existence yet, I was already aware of how lucky I was to get to ride on a plane and go places. Most often, we headed to Hong Kong, first because it was only an hour away from our country; second because my grandma liked to visit family who lived there. That said, we still don’t really go to Hong Kong that much so I never really got the chance to get close to my cousins, but I fondly remember my ah-pe.

My father’s elder brother, my grandma’s eldest son, had lived in Kowloon since his twenties. I will always remember ah-pe‘s confident stride as he led us to one of his recommended mum-and-pop restaurants for a delicious treat. For some reason, he used to only wear a vest over a shirt and a long-sleeved polo during cold days in Hong Kong. He also had this habit of walking block upon block without losing his sense of direction, even when he was the one visiting Manila.

It wasn’t until I made these Hong Kong Style Pineapple Buns that I realized how much I miss my ah-pe. I haven’t been to Hong Kong since his death, and with everything that’s happened there lately I haven’t had the chance to return. It’s one thing to appreciate these buns as a must-try food of Hong Kong, but quite another to have your subconscious attach a person to it. In the depths of my memory, I suppose there must have been at least one time during my childhood where he took me to eat 港式菠蘿包, or Hong Kong Bolo Buns, as these are also known.

It’s funny that the angle I was going for when I decided to make this recipe combination for the blog was to “transport you to Hong Kong wherever you are quarantined”. But when I sat down to actually write the post, I realized there was so much more to it.

This Triple Layer Panna Cotta combines the wonderful and classic flavors of vanilla, coffee, and chocolate in one pretty package! Paired with a ginger shortbread cookie, the silky panna cotta and buttery shortbread give a delightful contrast in textures and flavors.

This drive to make as many panna cotta flavors as possible can be called nothing else but an obsession. Before, I used to have trouble going through a carton of heavy cream, but now, I’m actually panicking because I don’t have heavy cream anymore and I can’t go to the grocery store. Luckily, I did manage to make a handful of panna cotta recipes before this lockdown happened. This Triple Layer Panna Cotta is the first I wanted to share from my backlog of recipes.

I always had the impression that the delicate panna cotta was hard to make, but it couldn’t be farther from the truth. I know that I probably should’ve started with a simple, single layer panna cotta, but after my first creation (the impressive looking Champagne Panna Cotta), I didn’t feel like stepping back. And so here we are!

These Coffee Chocolate Crinkles are one of the best I’ve eaten. The coffee and deep dark chocolate flavor combo creates a complex eating experience, with pockets of salty surprise scattered inside the cookies.

To say that I gained a new appreciation for chocolate crinkles after eating these would be an understatement. I’ve never paid much attention to crinkles because I feel like they’re one of the most easily accessible cookies around. I even used to have a classmate who sold crinkles for some extra pocket money, so I guess you could say that growing up, crinkles were always pretty much a norm of my youth. They were something yummy and familiar, but not really something that excited me, if you know what I mean.

It has been years since I last had a crinkle actually, but when I came across this recipe for Coffee Chocolate Crinkles, it was really the combination of the words coffee and chocolate that captured my attention. I don’t think I’ve ever eaten anything I didn’t enjoy as far as this flavor combo is involved, plus I’ve gone long enough without eating crinkles. I actually found myself missing it.

We all know how the story goes from there for people like me who love putzing around in the kitchen. When we get a craving, there’s an 80% chance we’ll end up making whatever it is.
